Awesome Vegan Meals by Luvo!

When the company Luvo contacted me to try out some of their vegan frozen meals, I was really excited about it, but was super impressed with how they arrived to me. Before we talk about these wonderful vegan products, let me tell you first about how amazing it was that this giant box of frozen meals traveled from the other side of the country, from the west coast all the way to me on the east coast, and when I opened the box they were still frozen! The dry ice was still intact, in fact we did a science experiment using it! So I thought that was really impressive and I wanted to give a shout out to Luvo for those amazing packaging skills.

This company does healthy and quick meals made from wholesome and real ingredients. They are not a full vegan company, although they have these amazing vegan meals, they also offer some that do include animal products, which is their only downside, in my humble opinion. Obviously I want every company that offers vegan products to be 100% vegan, but I respect that so many companies are offering an array of plant-based and vegan meals and are doing such a splendid job at it, like Luvo is.

Here's the scoop on what I tried from Luvo and what I think about these frozen meals:

Let me just start by saying that these four products are vegan, non-GMO and gluten-free, and I absolutely love that! Each meal is a fantastic offering of each food group and includes a lot of different components and flavors.

Hawaiian Un-Fried Rice: this meal has rice, shiitake mushrooms, pineapple and cashews, which are some of my favorite things melded together in one delicious plant powered bowl, but the best part is how authentic it tasted. A very enjoyable frozen meal for sure that is unlike any others.

Great Karma Coconut Curry: this bowl is a combination of jasmine rice, butternut squash and garbanzo beans along with the tempting flavors of coconut and curry making it just super yummy and perfect for any day of the week. This one you don't have to be in the mood for; I would eat this all the time and might not ever get tired of it.

So Cal Kale & Bean: this bowl is packed with red rice, broccoli and white beans. It tastes super fresh and clean while still remaining absolutely delicious. This one will be my go-to for after a workout for sure because I felt powerful after I consumed it.

Mighty Masala & Greens: brown rice, green garbanzos, cabbage and kale compose this stupendous vegan bowl and these are all my faves for so many reasons; the flavor combined with the nutritional aspect make this one my top choice.

All of these great Luvo meals are packed with whole grains, fresh quality ingredients, fiber, protein, and are super healthy while being delicious at the same time. Big thank you to Luvo for generously sending me this package - not only did I love your vegan products, but you also made me a huge fan of your company. Please keep including more vegan meals to your line, they are fantastic!

And for now, the Dirty Vegan is signing off - eat your beans and greens!

Vegan Rice Back At Taco Bell!

I just wanted to let everyone know that the vegan rice at Taco Bell is back again!

There was this weird thing that happened with their rice recently. They came out with vegan rice and launched their vegan menu, then suddenly started adding dairy to their rice in the form of butter, and it was no longer an animal-product-free rice. But now their vegan rice is back and the old butter rice is off the menu completely. This vegan rice is currently the only rice on the menu so that there will be no confusion as to which rice is safe for vegans to eat. Pheeeewwwww!

This Vegan Protein Shake IS GOOOOD!!!

So I got these cool vegan products in the mail from Elite Lifestyle Cuisine and I have to tell you about their vegan protein shake, which is amazing.

First of all, it is only 133 calories and 5g carbs per serving, which is awesome because depending on if I want to make it as a snack or meal replacement, I am adding either water or soy milk with banana, so this protein is perfect for my needs, whichever I'm choosing at the moment.

Super simple to use: just one scoop to 8 ounces of water (or vegan milk) and the scoop is included.

Impressive Amino Acid Profile here. I also love that the protein comes from pea, rice and pumpkin, which opens up this product to those who have soy allergies or sensitivity. Plus I like the taste, since the protein powder is a mixture of pea, rice and pumpkin protein, it is smooth and balanced and you don't get that funny aftertaste that can happen with other proteins that are just one main protein. Plus I really love balance. I'm not a fan of too much of one protein or thing in the diet, so the variety in this protein powder is really perfect actually.

I took a picture of this because when I opened up the container, the scoop was covered in powder and reminded me of a chocolate marshmallow or a marshmallow in cocoa powder and I giggled. Oh, the little things in life. Also, when you open this protein it smells SO FREAKING DELICIOUS! Smells like chocolate brownie or cake mix! I'm planning on using this in recipes too, like protein balls - how exciting!

The prepared protein shake is such a treat too! Amazing flavor and so versatile. I've already made it with banana, with spinach, with vanilla soy milk - all the different ways, it is super yummy! Probably one of my favorite protein shakes right now and I'm definitely enjoying this brand.

ELC also sent me their vegan multivitamin that is in a vegetarian capsule.

Impressive nutritional breakdown for sure.

The capsule makes it easier to drink down than my regular multivitamin which is actually really difficult to take, but the ELC vitamin is required to be taken as 4 capsules per day and do that twice per day if you are in poor health. I'm more of a fan of a one-and-done vitamin, so I'm not sure if this is a product I'd try again. I felt the same taking it as when I'm taking other multivitamins or when I'm not taking one regularly. I would say it is worth a try if you are one that needs the ease of a vitamin that goes down super effortlessly, also if you are one who likes to break up your vitamin taking to spread it out throughout the day. I would love to do it that way if I had time, but with this product, I can see myself taking them all at once so I don't forget later because of how super busy my schedule is.

This protein powder is the winner, hands down, and I would definitely get this protein again and again. I love that it is 100% vegan, soy-free for those who care about that, gluten-free, sweetened with Stevia (awesome because I typically add sweetened vegan milk and ripe bananas) and non-GMO. There are protein powders on the market right now (I won't name names but I think you might know) that are awesome nutritionally and protein-wise, but are GMO or non-confirmed GMO-free, so the fact that ELC vegan protein powders are non-GMO is so important to me. This protein is also a whopping 21 grams of protein per serving, so you really can't ask for anything better than this stuff. I think the price is resonable and affordable, especially for those of you who are used to buying supplements and aware of their cost.

Loving this vegan chocolate protein, for reals. Big thank you to the folks at ELC for thinking of me and sending me your wonderful vegan products to try!

And for now, The Dirty Vegan is signing off - I hope you enjoy lots of health food that tastes like junk-food today too! Muah!

What We Had For Dinner Last Night

Hungarian-Style Braised Mushrooms

This is my favorite PETA recipe that my hubby and I have been making for years and years. We absolutely love it! Tons of flavor and you can change the recipe up by using different types of mushrooms for variety. We served this over spaghetti, but we've had it over any grain like rice, quinoa, or different types of pastas. It is also delicious by itself as a type of soup or stew.

Fun DV Fact: PETA's recipes really saved my ass when I first became vegetarian and subsequently vegan. I also bought their recipe cards, that I still have to this day, and I spent a lot of time on their website and online learning everything I possibly could about animal rights. The reason I am the Dirty Vegan is because I watched an undercover PETA video that exposed animal cruelty at a factory farm. I started posting in the PETA2 forums and wished that I could be more of a voice for animals. I then started writing letters to companies, politicians, and law enforcement in response to action alerts. Every chance I could get, I would promote veganism and have been an animal rights activist ever since I became veg, which was the second I viewed that PETA video. Now, thousands of people from all over the world read this blog. I've received lots of emails from folks who were inspired to become veg after reading my work. Even if someone were to make my recipes, or go meatless sometimes in order to try them, we are still saving lives. Whether it is big or small, it is joyous to see the positive changes we are making for our cause and movement.

This is what this amazing Hungarian Mushroom dish looks like once you add in the cashew cream. Yummy! Definitely one of my favorite dinners ever! You should really check out the recipe.

What is your favorite dinner? You know, the type of dinner that if you had to choose only one dinner to eat for the rest of your life, you would choose it.

Cramazing Meal Idea

We've all had those days...short on time, short on food, even shorter on ideas, which really sucks. So you basically have to make the best of what you have. When I have a refrigerator and pantry that's crazy stocked, you guys get three course meal recipes that include things like Tofu Scallops. On other days, you get ideas like this meal you see now - which is me making the best with what I have today.

We needed dinner, and we needed it fast! I look in the refrigerator....almond milk, purple stuff, Soyrizo! I look in the freezer and I have Gardein's Seven Grain Crispy Tenders and a bag of frozen green beans. So I had to get started! I basically cooked the green beans in a saute pan with olive oil, after a few moments I added the Soyrizo, and then the Gardein, added a splash of terriyaki sauce, and a few seasonings, and Cramazing was born! A dish that is crazy...but ended up tasting amazing. I threw this Cramazing over some leftover brown rice that was also in my fridge, and we were good to go!

I hope this gives you inspiration for when you have one of those dinners of desperation. You may even want to try this Cramazing dish for yourself! And for now, the Dirty Vegan is signing off. Tootles!

Veggie Squid Stir Fry

Are you looking for something different to make for dinner? Well Veggie Squid is certainly not of the ordinary, at least not for me. Dirty Vegan Foods did the Boston Vegetarian Food Festival and came across some dehydrated vegan "meats" sold by a company from New York. It was insane what they had. I opted for things that looked less like real meat, and more like dehydrated veggie protein. We got a few packages of different items, but one thing that was out of the ordinary, was the veggie "squid". What you must do to prepare it is soak it in water, and the "squid" plumps right up, just like dehydrated mushrooms do. I really enjoyed the flavor in this yummy recipe. If you can't get your hands on some of this stuff, you can substitute a similar vegan protein, but try China Town for some good veggie "seafood".

Fake It With My 'Veggie "Squid" Stir Fry' Recipe

2 tbsp coconut oil
2 cloves garlic, chopped
2 cups broccoli florets
1 package veggie "squid" strips, soaked in 1/4 cup water for 20- 30 minutes
1/8 cup vegetable broth
2 tbsp olive oil
1 tbsp shoyu (or soy sauce/ tamari/ Liquid Aminos)
black pepper to taste

Heat wok or skillet on medium high heat. Add oil and saute garlic in coconut oil for a moment. Add broccoli and stir fry for 3 minutes; add "squid" strips. In a bowl, whisk broth, olive oil, shoyu, and pepper to make a sauce. Pour sauce over stir fry and cook for a few moments more. Serve over rice or noodles. Enjoy!

How to Eat Vegan in the Apocalypse: a Home-style Recipe

Have you ever seen that show Apocalypse man?
All he really eats are canned foods he finds around the abandoned city, things like cat food. He never addresses being a vegan, natural foodie during the Apocalypse. So today, I'm going to give you a great idea for a comforting vegan meal, that is Apocalypse-friendly!

As soon as the shit goes down, head to the natural foods store. I'm sure no one will be there, because everyone figures there will be an abundance of grass and twigs outside after the catastrophic event takes place. It will be our little secret that there is actual good food in there - wink, wink. Grab a bunch of those pouches with brown rice, quinoa, and grains (you know the ones that say, "microwave in the pouch for 90 seconds"), then head to a Target or Walmart (the grocery is too obvious of a choice - really who is going to go to a place that sells targets and walls?). You might have to fight others in the bean isle, but once you win, grab yourself a can of black beans. In that same isle, you will find canned vegetable mixes that are natural and seasoned, especially if you are in a Super Target or Walmart. In my mock-Apocalypse scenario, I chose a can of seasoned okra, tomatoes, and corn. If you are concerned with your health still, read the back of the label, some cans of seasoned mixed vegetables do contain preservatives. The same goes for the black beans. If at this point, you don't give a flying fudgesicle about keeping your beautiful vegan body healthy, do what you gotta do. Now, you will have to find a bowl, which won't be hard in a store like this. Like really, who would be looting bowls at a time like this? Find one that is fire-safe. *Please note, the Dirty Vegan does not encourage or condone looting. We are talking about a fictional scenario that probably will not occur in our lifetimes (insert foot in mouth if the Mayans are right, hello 2012!)* Now is probably a good time to get a can opener and hang on to it. You will really need this now. Also, it might be a wise idea to cruise down the camping isle and get yourself some supplies. *Side note: After you enjoy your delicious home-style meal, you will want to get to a library. At the library, grab a book that tells you what plants are edible and safe to eat, you will be needing this also* Find a safe place for your fire. Set up one of those hangy things that you see hobos heat their beans on. Start a fire to cook your food. Don't ask me how to do this, I'm not a boy scout, I'm a vegan food blogger. Open pouch of grains, can of beans, and can of mixed seasoned vegetables, and combine in bowl. Heat food to your desired temperature, and enjoy!

Here is the full recipe:

Survival Home-style Vegan Meal #1 (yes, this means I will be doing another one of these ridiculous posts in the future)

2 cups rice/ quinoa/ grain combination
1 15oz can black beans
1 15oz can seasoned mixed vegetables

Family Pleasing Creamy & Cheezy Bake

"Food is our common ground, a universal experience." -James Beard

Don't we all just love easy and cheezy? Bakes are super simple, come together nicely, and can be popped right into the oven until they are ready to serve. They also provide great leftovers for the next day's lunch! Another thing about casseroles is that you can easily make them a balanced meal. This recipe has protein in your tofu and beans, lycopene in your tomatoes and paste, healthy carbohydrates in your rice (I used brown rice to be extra healthy), and lots of other healthful ingredients. You can add more or different veggies depending on what you have on hand. At any rate, this is a great meal that tastes absolutely sinful!

Savor My Family Friendly 'Cheezy Rice & Beans Bake' Recipe

1 cup cooked rice
1/2 large onion, chopped
1 pint grape tomatoes, halved
8oz tofu, drained & cubed
15oz can pinto beans, drained & rinsed
1 package (2 cups) Daiya Pepper Jack Shreds "cheese"
1 6oz can tomato paste
1/4 cup Veganaise
2 tbsp Silk Original Creamer
1/ 2tsp crushed red pepper flakes
1/2 tsp chili powder

Preheat oven 350 degrees. Add all ingredients to a casserole dish. Combine very well and level with a spoon. Cover and bake for 30 minutes, then an additional 15 minutes uncovered. You may want to serve this with a dollop of your favorite complimentary condiments, like guacamole, Tofutti Sour Cream, or pico di gallo. Enjoy!

So in honor of this wonderful Meatout 2011 event, I wanted to provide a yummy vegan alternative to a classic treat. And it is EASY!!! That's how I like it, quick, easy, and Dirty!

Crispy Rice Marshmallow Treats

What you will need:

3 tbsp vegan buttery spread (I used Smart Balance Light - it is vegan and easily attainable, in almost every grocery store)
10 oz bag of vegan marshmallows (I used Dandies - in my opinion the best vegan marshmallow out there right now and it doesn't need refrigeration - these taste as good as what I remember them to taste like and even better!)
5 or 6 cups puffed rice cereal (I say 5 or 6 because you can make them a bit less sweet and lighter tasting by adding more cereal - I wouldn't use more than 6 cups however, because you don't want them to be too dry)
Fun add-ins: chocolate chips, coconut flakes, peanut butter chips (optional)

What to do:

Melt the buttery spread in a large saucepan on medium heat. Then add the vegan marshmallows and melt, stirring frequently. When the mixture is very melty and gooey, remove from heat and add in the cereal. Form mixture into a greased pan using a buttered spoon. Let cool; once cool you can cut them into squares and serve. Enjoy!

The treats cooling in the pan

YUM! So good! Enjoy and thanks for visiting! Bookmark or follow this blog for more Dirty!

Easy 3 Course Meal

This is an easy 3 course meal that can be made in advance or any way that works best for you. I marinated the tofu "scallops" first, then made the salad dressing and put it in a container, made the truffles and refrigerated them, then prepared the tofu and Brussels sprouts when it was time to prepare and eat the meal. Read on to see the complete meal, recipes, and how you too can make a hearty, delicious, gourmet-style, easy 3 course meal!

Tofu "Scallops" and Roasted Garlic Brussels Sprouts over a bed of brown rice

Coconut Coffee House Truffles

1st Course - Salad:

Prepare salad greens in bowls. Slice tomato and/ or other vegetables that you would like on your salad. If you have a favorite salad dressing, you can skip this step. If you would like to try mine, use this recipe:

Sweet Peanut Onion Dressing

-1/2 cup canola or olive oil
-1/4 cup peanut butter
-2 tbsp Braggs liquid aminos or soy sauce
-1.5 tbsp onion powder
-1 tsp garlic powder
-3 tbsp maple syrup
-sea salt and pepper to taste

Blend all ingredients in food processor until smooth. Store in refrigerator in an airtight container until use.

2nd Course - Tofu "Scallops", Roasted Garlic Brussels Sprouts, and Brown Rice:

Prepare brown rice according to  package instructions. Minute kind works best for this meal plan. You can serve the "scallops" with their sauce, and Brussels Sprouts over the brown rice, if you wish.

Tofu "Scallops"

-1 container of tofu
-2 tbsp oil

Marinade
-1 sheet of nori, crumbled up
-1 veggie bouillon cube (I used Edward & Sons brand)
-1 cup warm water
-1 tbsp powdered dulse
-2 tbsp sweet miso paste
-1 tbsp Dijon mustard
-sea salt and pepper to taste

Sauce (what will be added to marinade later to make a sauce)
-3 tbsp vegan buttery spread (I used Earth Balance brand)
-3 tbsp wheat flour
-3 tbsp white wine

Cut block of tofu in half vertically. Then cut out tiny circles with these two thinner "sheets" of tofu to make "scallops" (you can use a small round cookie cutter, a tea ball, or carefully create circles with a butter knife). Place tofu circles in a container. Combine marinade ingredients together and then pour into the container of tofu circles. Let marinade in refrigerator for at least 1 hour (the more time, the better to flavor the tofu).

When you are ready to prepare the "scallops", heat oil over medium heat in skillet. Remove just tofu from marinade and cook in skillet until brown on each side (about 5 minutes or more on each side). While those are browning, heat the buttery spread, flour and wine in a saucepan to make a rue. Then add marinade and simmer on low heat, stirring frequently, until its a thickened sauce.

Pour sauce over tofu "scallops" to serve.

*Note: The nori and dulse add a great "sea flavor" to the tofu "scallops". Dulse is also a great source of iodine. You can find nori, dulse, and miso paste in Whole Foods.*

Roasted Garlic Brussels Sprouts

-1 lb fresh Brussels sprouts
-2 tbsp garlic, minced
-3 tbsp olive oil
-sea salt and pepper to taste

Preheat oven to 400 degrees. Cut off stems of Brussels sprouts then half them. Place in casserole dish. Toss with olive oil, garlic, salt and pepper. Roast in oven for 30 minutes or until browned, tender, and crisp, to your liking. Stir once halfway thru.

3rd Course - Coconut Coffee House Truffles:

These can be made in advance of the meal and refrigerated until serving.

Coconut Coffee House Truffles

-1/3 cup SoDelicious Coconut Hazelnut Coffee Creamer
-2.5 tbsp vegan coffee liquor
-12 oz vegan semisweet chocolate chips

To roll truffles in
-coconut shavings, chopped or grated (I used Edward & Sons brand)
-cocoa powder
-mix a little of each for another flavor option (like you see in my picture)

In a saucepan on low heat, bring creamer and liquor to a simmer. Then remove from heat and melt in the chocolate chips. Transfer to a shallow bowl and let the truffle mixture set (I had to pop it in the refrigerator for a while to get the consistency I wanted).

Once cool, set, and at a workable consistency, form into truffle balls, and place on wax paper. Let refrigerate in the ball form for a few minutes before finishing. Then shape and smooth out lines. Roll each truffle into either cocoa, coconut, or a mixture of the two. Enjoy!

I hope you enjoy making and eating these recipes! This is an easy way to enjoy a very gourmet 3 course meal!

Quickie Veggie Burger Home-style Meal

Pay attention because this is going to be fast! A full home-style meal, made in just minutes. The taste is so satisfying and bold, you will fool anyone with it.

What you see above is a Morningstar Farms Vegan Griller, slathered in sauce and broiled to perfection over a bed of minute brown rice with sides of garlic seasoned green beans and buttery mixed vegetables. This took literally 15 minutes, probably not even that. And the meal is about 4 servings.

Rice - First make the rice according to the box's instruction. I used some minute-type brown rice that cooked in 5 minutes, so I had that going on the stove while I did the other part of the meal. If you have some leftover (I like to make big batches of rice at a time to use for a few meals), even better, all you have to do is warm it up slightly.

Buttery Mixed Vegetables - I used steam in the bag. Once that is done in the microwave, carefully transfer to a bowl and add 2 tbsp Earth Balance buttery spread, salt and pepper to taste, and mix it up.

Garlic Green Beans - I used steam in the bag again for these. I then transferred them into a saute pan, with 1 tbsp olive oil and 2 tbsp minced garlic (from the jar - think EASY), added garlic powder, salt, pepper to taste, and sauteed on low while I prepared the veggie burger.

Savory Onion Sauce Broiled Veggie Burger - take 4 vegan burgers (either Morningstar Farms Vegan Grillers, Boca Vegan burgers, or any other vegan burger you fancy) and microwave them for 2 minutes. That will get them defrosted and warmed, but not overcooked. Then take 4 tbsp Veganaise (or any vegan mayo), 1 tbsp Braggs liquid aminos (or tamari/ soy sauce/ shoyu - whatever you have on hand), 1/2 tbsp onion powder, 1 tbsp dijon mustard, and mix together. Spread on top of veggie burgers and sprinkle the tops with a pinch of cayenne pepper. Broil in your regular or convection oven for about 3-5 minutes. You want them to warm and the sauce start to become melty, bubbly, and lightly brown.

Finally, just take a scoop of each - rice, and sides - arrange in a plate and top with one of the veggie burgers. And there you have it, a super quick and extremely tasty meal. Enjoy!
