So, I know its been a couple of weeks since my last post. I did not realize what a busy time of year this would be for the Dirty Vegan and Dirty Vegan Foods. Benefits, charity events, markets, and festivals have us pretty busy these days. But here is a goodie to make up for my blogging hiatus!
This is a lentil loaf recipe! And its not your ordinary lentil loaf, so don't underestimate it. THIS is a Tofurky and lentil loaf with a sweet holiday glaze! This recipe is perfect for that party, holiday, or extraordinary meal for this time of year. The addition of liquid aminos to the glaze will ensure your body uses all the protein from the lentils and Tofurky most efficiently also! This meal is high protein, and the protein in Tofurky is whole soy that is free of hexane or GMOs, so now you know why I love Tofurky so much! I served creamy mashed potatoes and sweet "buttery" corn with the loaf to make this extra comfy and cozy. Enjoy!
Oh So Dirty 'Tofurky Lentil Loaf w/ Maple Brown Sugar Glaze' Recipe
1 medium onion, chopped
1 tbsp coconut oil
2 cups cooked lentils
14 oz package Tofurky Italian "Sausage" (4 links), chopped
salt & pepper to taste
6 oz tomato paste
2 tbsp brown sugar
3 tbsp pure maple syrup
2 tbsp Bragg's Liquid Aminos (or soy sauce)
black pepper to taste
Preheat oven 350 degrees. In a saute pan, cook onion in coconut oil until tender. Add lentils and cook until well combined and warmed. Add Tofurky, season with salt and pepper, and combine. Remove from heat. Pack mixture into a greased loaf pan. Prepare the glaze by mixing all the glaze ingredients then spread evenly on top of the loaf. Cook covered loaf in oven for 30 minutes, then for an additional 30 minutes uncovered. Slice and serve. Yum!
To make these amazingly awesome mashed potatoes, you just cube and boil them, then mash to perfection with a hand mixer. Mix in vegan butter, coconut creamer, chives, and garlic salt. You should try these too!Tweet
