YUMbo Gumbo!

I received a very sweet letter from one of my awesome readers saying how much they love and appreciate my blog and also requesting a gumbo recipe. Well you asked for it! Keep the emails and requests coming, I love hearing from you all and I am honored and blessed to have such loyal readers. You rock! And you will absolutely love this gumbo. It's so filling and'll see.

Brown Rice Gumbo

1/3 cup olive oil 1/3 cup flour 3 cloves garlic, minced 1 cup celery, diced 1 cup onion, chopped 1 cup bell pepper, chopped 1 cup tomato, chopped 1 package Tofurky Italian Sausage, chopped 1 1/2 qt vegetable broth2 cups okra, sliced 1 tbsp cajun seasoning 1 tsp cayenne pepper Sprinkle of thyme Sprinkle of oregano Sea salt & pepper to taste 2 cups brown rice, cooked

Heat olive oil in large saucepan. Slowly stir in flour to make a rue. Add garlic, celery, onion, bell pepper, and tomato and mix until vegetables are coated with rue. Add in remaining vegetables and cook until vegetables are to your desired tenderness. Enjoy!!!!
